Black Bean Wild Rice Salad

Black Bean Wild Rice Salad

This easy salad recipe is my own creation. Vary the peppers according to your own tastes. If you like spicier food, add some minced jalapenos, or use hot mustard instead of the honey Dijon.

Prep Time: 20 minutes

Cook Time: 45 minutes

Total Time: 1 hour, 5 minutes

Yield: Serves 8

Ingredients:

  • 1 lb. pkg. wild rice, rinsed
  • 1 (12-ounce) package orzo
  • 1 cup plain yogurt
  • 1/2 cup creamy honey Dijon salad dressing
  • 1/4 cup milk
  • 1/4 cup honey Dijon mustard
  • 3 tablespoons lemon juice
  • 1/3 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 15 oz. can black beans, rinsed and drained
  • 12 oz. can dark and white meat chicken, drained
  • 3 bell peppers, chopped (I like using green, red, and yellow)
  • 1 pint cherry tomatoes

Preparation:

Cook wild rice as directed on package until tender (about 40-45 minutes) and drain if necessary. Cook orzo according to package directions, and drain well. Meanwhile, in large bowl combine yogurt, salad dressing, milk, mustard, lemon juice, and cheese. Mix until combined, then season to taste with salt and pepper. The dressing should be quite strong because the rest of the ingredients are mild. Add wild rice, orzo, black beans, chicken, peppers, and tomatoes and stir well. Cover and refrigerate at least 2 hours before serving.
