Cherry Chicken Salad

If you can't find fresh cherries, try using frozen, thawed bing cherries in this excellent chicken salad recipe.

Prep Time: 25 minutes

Ingredients:

  • 1 fresh pineapple
  • 4 cups cubed cooked chicken
  • 1 cup sliced celery
  • 1 lb. bing cherries, pitted, halved
  • 1/2 tsp. salt
  • dash pepper
  • 1 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tsp. sugar
  • 2 Tbsp. milk
  • 1 Tbsp. lemon juice

Preparation:

Cut pineapple lengthwise into 6 sections. Cut flesh of pineapple away from rind and cut out core. Cut pineapple into 1" chunks and set aside.

In large bowl, combine chicken, celery, green onions, salt and pepper and toss lightly. Add cherries and pineapple and mix gently. In small bowl, combine mayonnaise, sour cream, milk and lemon juice and stir until smooth. Pour over chicken mixture and stir gently to coat. Cover and refrigerate several hours. Serves 6
