Wow; this excellent salad is bursting with fresh flavors.
Prep Time: 15 minutes
Ingredients:
- 1-1/4 cups lemon yogurt
- 1/4 cup mayonnaise
- 2 tsp. sugar
- 2 Tbsp. milk
- 1 cup gemelli pasta
- 2 cups cooked, cubed chicken
- 1 cup chopped celery
- 1/4 cup chopped green onions
- 1 cup raspberries
- 2 cups fresh blueberries
Preparation:
In large bowl, combine yogurt, mayonnaise, sugar, and milk and mix well. In large pot of boiling water, cook gemelli pasta until al dente, according to package directions. Drain well and add to yogurt mixture. Add chicken, celery, and green onions and stir to coat. Gently stir in blueberries and raspberries. Serve immediately or cover and refrigerate for up to 1 day.
