Couscous Chicken Salad

Dried apricots, couscous, and the flavors of the Middle East make this exotic chicken salad recipe so delicious.

Prep Time: 20 minutes

Cook Time: 10 minutes

Ingredients:

  • 1/4 cup vegetable oil
  • 1/3 cup orange juice
  • 1 tsp. cumin
  • 1 tsp. dried coriander
  • 1/2 tsp. turmeric
  • 1/2 tsp. salt
  • 1/4 tsp. cinnamon
  • 1/4 tsp. pepper
  • 1-1/2 cups uncooked couscous
  • 2/3 cup slivered dried apricots
  • 1-1/2 cups boiling water
  • 2 (12 oz.) cans chicken, drained
  • 11 oz. can mandarin oranges, drained
  • 1/3 cup slivered almonds, toasted

Preparation:

In small bowl, for salad dressing, combine oil, juice, cumin, coriander, turmeric, salt, cinnamon and pepper and blend well with wire whisk. Set aside.

In large bowl, combine couscous and apricots; add boiling water and cover. Let stand for 5 minutes, then fluff with fork.

Add chicken, oranges, almonds and salad dressing and toss gently to coat. Cover and chill if desired. 4-6 servings
