Janice G wrote to me and said she has categorized all of her main dish recipes according to the meat used. She has a special category for summer dishes, and shared this fabulous recipe with me. I adore the combination of flavors, textures, and colors in this salad.
Prep Time: 25 minutes
Cook Time: 15 minutes
Ingredients:
- 2 cups cubed cooked chicken breast
- 1 yellow bell pepper, diced
- 1 cup diced celery
- 1/2 cup crumbled blue cheese
- 3/4 cup mayonnaise
- 2 Tbsp. milk
- Salt and white pepper to taste
- 10 oz. pkg. mixed salad greens
- 2 pears, peeled, cored, chopped
- 1/2 cup crumbled bacon bits
Preparation:
In medium bowl, combine chicken, bell pepper, celery, and blue cheese. Gently add mayonnaise, milk, salt and white pepper and carefully mix to coat. Cover and chill.
To serve, top dinner plates with salad greens, and top with the chicken mixture. Sprinkle with bacon bits. Prepare pears and sprinkle over salad. Serves 2-3
