Oriental Sesame Chicken Salad

This fabulous salad is similar to a famous fast food chain's new chicken salad, but you don't have to wait in a drive-through line!

Prep Time: 25 minutes

Cook Time: 15 minutes

Ingredients:

  • 1.2 oz. pkg. Oriental Sesame salad dressing mix
  • 4 boneless, skinless chicken breasts
  • 1 (15 oz.) can mandarin oranges, drained, reserving juice
  • 2 cups frozen edamame (soybeans)
  • 4 cups mixed lettuces

Preparation:

Prepare salad dressing mix as directed on package. Measure out 1/4 cup and add 1/4 cup reserved mandarin orange juice; place in zip lock bag and add chicken breasts. Seal bag and refrigerate for 1-8 hours. Combine remaining salad dressing with 1/4 cup mandarin orange juice; mix well, cover, and refrigerate.

When ready to eat, prepare and preheat grill. Cook soybeans according to package directions and cool. Grill chicken over medium coals 6-8 minutes per side, turning once, until cooked through; brush with marinade while cooking on first side and one time after the chicken is turned. Discard any remaining marinade. Let chicken stand for 5 minutes. In large bowl combine oranges, soybeans, and mixed lettuces with some of the refrigerated salad dressing; toss well and place on four serving plates. Slice chicken and place on top of each salad. Drizzle with more dressing and serve. Serves 4
