This easy salad recipe is my own creation. Vary the peppers according to your own tastes.

Cook Time: 45 minutes
Ingredients:
- 1 lb. pkg. wild rice, rinsed
- 1 (12-ounce) package orzo
- 1 cup plain yogurt
- 1/4 cup milk
- 3 Tbsp. honey dijon mustard
- 1/2 cup mayonnaise
- 1/3 cup grated Parmesan cheese
- 15 oz. can black beans, rinsed and drained
- 12 oz. can dark and white meat chicken, drained
- 3 bell peppers, chopped (I like using green, red, and yellow)
- 1 pint cherry tomatoes
Preparation:
Cook wild rice as directed on package until tender (about 40-45 minutes) and drain if necessary. Cook orzo according to package directions, and drain well.Meanwhile, in large bowl combine mayonnaise, yogurt, milk, mustard, and cheese. Mix until combined.
Add wild rice, orzo, black beans, peppers, chicken, black beans, and cooked wild rice and stir well. Cover and refrigerate at least 2 hours before serving. Serves 8
