Orzo Pesto Salmon Salad is a delicious and easy main dish salad recipe using leftover grilled salmon fillets and lots of veggies.

Ingredients:
- 1/2 cup mayonnaise
- 1/2 cup plain yogurt
- 2 (9-ounce) packages basil pesto
- 1/3 cup grated Parmesan cheese
- 2 tablespoons milk
- 2-3 grilled salmon fillets, flaked
- 1 pint grape tomatoes
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 green bell pepper, chopped
- 2 cups cubed Havarti cheese
- 2 cups frozen baby peas
- 16 ounce package orzo pasta
Preparation:
Bring a large pot of water to a boil.
Meanwhile, combine mayonnaise, yogurt, pesto, grated cheese, and milk in large bowl and mix until combined. Gently stir in salmon, tomatoes, bell peppers, and cubed Havarti cheese.
Place peas in colander. Cook pasta until just tender; drain in colander over peas, then add to salad. Stir gently to coat and chill for 2-3 hours before serving.
