Ingredients:
- 1/2 cup three cheese Italian salad dressing
- 1/2 cup plain yogurt
- 1/4 cup mayonnaise
- 3 tablespoons milk
- 1/4 cup grated Parmesan cheese
- 1 (16-ounce) package orzo pasta
- 1 or 2 cooked salmon fillets or steaks
- 2 cups grape tomatoes
- 1 yellow bell pepper, chopped
- 1 green bell pepper, chopped
- 1 cup diced Havarti or Muenster cheese
- 1 cup frozen baby peas
Preparation:
Flake salmon and add to dressing mixture along with tomatoes, bell peppers, and cheese and stir gently. Top with peas; do not stir.
Cook pasta according to package directions until al dente. Drain and add to salad in bowl; stir gently to combine. Cover and chill for 2-3 hours to blend flavors before serving. Serves 8
