Tuna Raisin Salad

This delicious and unusual tuna salad recipe is perfect for a warm summer night. It's so fancy you can serve it to guests!

INGREDIENTS:

  • 1/3 cup uncooked couscous
  • 1/4 cup red wine vinegar
  • 2 Tbsp. olive oil
  • 1 Tbsp. Dijon mustard
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/4 tsp. sugar
  • 1/8 tsp. garlic powder
  • 2 green bell peppers, chopped
  • 1 cucumber, peeled, seeded and chopped
  • 1 sweet red onion, chopped
  • 1/2 cup golden raisins
  • 6 oz. can chunk albacore tuna, drained
  • 11 oz. can extra sweet corn, drained

PREPARATION:

Bring 1/2 cup water to a boil in a medium pan: stir in couscous. Remove pan from the heat; cover and let stand 5 minutes. Fluff the couscous with a fork and set aside.

In medium bowl combine vinegar, olive oil, mustard, salt pepper, sugar and garlic powder and stir to blend. Add the couscous, bell pepper, cucumber, onion, raisins, tuna, and corn. Toss to coat. Cover and chill for at least 1 hour to let the flavors blend. Serves 6
