This easy and hearty vegetarian main dish salad is ready in minutes. I love the combination of crisp taco chips and lettuce against the creamy and spicy hot chili beans and salsa.

Cook Time: 3 minutes
Ingredients:
- 1 onion, chopped
- 1 Tbsp. olive oil
- 15-oz. can spicy chili beans, undrained
- 1 cup thick salsa
- 10-oz. can corn with peppers, drained
- 10-oz. pkg. romaine lettuce
- 2 cups taco chips, crushed
- 1 cup shredded Pepper Jack cheese
- 1/2 cup sour cream
Preparation:
In large skillet, cook onion in oil until tender. Add chili beans, salsa and corn and simmer 2-3 minutes until hot. Place romaine lettuce in large serving bowl and top with bean mixture, taco chips and cheese. Pass sour cream to top each serving. 4 servings
