Mexican Greens Salad

This easy and hearty vegetarian main dish salad is ready in minutes. I love the combination of crisp taco chips and lettuce against the creamy and spicy hot chili beans and salsa.

Prep Time: 20 minutes

Cook Time: 3 minutes

Ingredients:

  • 1 onion, chopped
  • 1 Tbsp. olive oil
  • 15-oz. can spicy chili beans, undrained
  • 1 cup thick salsa
  • 10-oz. can corn with peppers, drained
  • 10-oz. pkg. romaine lettuce
  • 2 cups taco chips, crushed
  • 1 cup shredded Pepper Jack cheese
  • 1/2 cup sour cream

Preparation:

In large skillet, cook onion in oil until tender. Add chili beans, salsa and corn and simmer 2-3 minutes until hot. Place romaine lettuce in large serving bowl and top with bean mixture, taco chips and cheese. Pass sour cream to top each serving. 4 servings
