Mixed Salad with Potato Croutons

Potato croutons are so crispy and delicious; I really love using these on salads. They add more flavor than regular croutons and combine beautifully with the salad greens. Add some cooked chopped chicken or turkey to this salad for heartier appetites.

Prep Time: 20 minutes

Cook Time: 35 minutes

Ingredients:

  • 2 potatoes, peeled and cubed
  • 2 Tbsp. olive oil
  • 1/2 tsp. garlic salt
  • 1/8 tsp. pepper
  • 10-oz. bag mixed salad greens
  • 2 hard cooked eggs, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 cup creamy Parmesan salad dressing

Preparation:

For hard cooked eggs, see egg salad sandwich spread recipe.

Toss potatoes with olive oil and garlic salt and place on a cookie sheet. Roast them at 400 degrees for 35-50 minutes until they are brown and crispy. Drain on paper towels and let cool about 10 minutes. Combine remaining ingredients in large bowl and toss gently. Top with potato croutons and serve. 4 servings
