This salad recipe would be a great centerpiece for a cool vegetarian dinner. The combination of couscous and garbanzo beans provides complete protein.

Ingredients:
- 2 cups cooked couscous
- 1 cup sliced yellow summer squash
- 1/2 cup sliced zucchini
- 1 red bell pepper, chopped
- 1/3 cup chopped red onion
- 1 (15 ounce) can garbanzo beans, rinsed
- 3/4 cup plain yogurt
- 1/2 tsp. salt
- 1/4 cup mayonnaise
- 1 tsp. curry powder
Preparation:
Mix couscous, summer squash, zucchini, bell pepper, red onion, and garbanzo beans in large bowl. Combine yogurt, salt, mayonnaise, and curry powder in small bowl, then stir into couscous mixture. Cover and refrigerate at least 1 hour to blend flavors. 6 servings
