Pierogie Mac and Cheese

Frozen foods are the stars of the convenience food world. Take some time to browse through the freezer section in your local grocery store and prepare to be amazed. There are so many wonderful ingredients stocked in the deep freeze. And you can cook them straight from the frozen state!

That means all you have to do to make these wonderful and delicious recipes is combine some frozen foods with canned or fresh ingredients and add heat. The food thaws and heats/and or cooks beautifully. Meat stays more tender when cooked this way, and vegetables keep their wonderful bright color and crisp tender texture. Keep your fridge stocked with the ingredients needed for a few of these recipes and you'll never have to order takeout again, no matter how tired you are at the end of the day.

Feel free to substitute your own favorite ingredients for the ones listed in these recipes. You can use chicken instead of salmon in the Salmon Chowder; use chicken meatballs instead of beef meatballs in Meaty Hash Brown Potatoes, or use ravioli in place of tortellini in Tortellini Simmer. Enjoy these easy recipes.

Dinner From the Freezer

  • Creamy Ravioli and Squash Casserole
I invented this casserole because I love the combination of broccoli and bacon. The bacon somehow permeates the entire dish giving it a wonderful smoky flavor. This casserole is special enough for company and it takes about 5 minutes to put together.
  • Red and White Tortellini
My old standby! I've made this recipe without meatballs, with meatballs, with cooked chopped turkey and chicken, with ham, and with flaked salmon. It never fails.
  • Meaty Hash Brown Potatoes
Just five ingredients make a wonderfully hearty casserole that will warm you down to your bones. I love the combination of flavors and textures in this winner.
  • Double Corn Chowder
Frozen corn and hash brown potatoes form the base of this wonderful chowder. Creamed corn adds richness, and bacon adds great flavor.
  • Overnight Meatball Casserole
Dried pasta is used in this casserole, making it the easiest pasta dish ever. Make it before you go to bed, then the next evening just pop it in the oven for a hot meal.
  • Turkey From the Frozen State
You don't have to reserve turkey for Thanksgiving. Cook a frozen turkey, unstuffed, for pounds of moist and tender meat you can use for sandwiches, casseroles, and soups. This is the best way to get lots of turkey for almost no work.
  • Tortellini Salmon Bake
This fresh casserole uses frozen tortellini and frozen peas, along with Alfredo sauce and canned salmon to make a quick and healthy dinner everyone will love.
  • Salmon Chowder
Another hearty chowder! You can use onions instead of the leeks if you'd like. Frozen potatoes and corn add texture and color.
  • Hash Brown Beef Bake
This meat and potatoes dish will please every hearty eater in your family. Use your favorite condensed soup and your favorite cheese.
  • Chicken Potato Bake
Tender chicken is coated with flavored bread crumbs and baked on a creamy potato base. This is true comfort food.
  • Shrimp and Broccoli Stir Fry
Frozen broccoli and red peppers combo thaws to perfection while cooking in this easy recipe. To thaw frozen shrimp, just rinse it under cool water for a few minutes.
  • Fried Pierogies with Butternut Squash
When I found frozen cubed butternut squash at my local grocery store I was so happy. This fabulous convenience food is perfect in this simple and unusual recipe.
  • Crockpot Apricot Chicken
This easy recipe starts with frozen chicken breasts. They stay moist and tender when cooked this way in the slow cooker.
  • Meatball Hoagies
Frozen meatballs cook very well in the slow cooker. I love this recipe because it serves a crowd with very little effort.
  • Tortellini with Peas and Parmesan
I think this was the first recipe I made with frozen tortellini. It's my fallback recipe when I just don't want to cook anything but everyone is hungry!
  • Tortellini Simmer
This recipe is slightly more complicated, because it starts with ground beef and onions, but the end result is fabulous. And it takes only 30 minutes, start to finish.
  • Creamy Tomato Pierogie Casserole
I love pierogies; those large stuffed pasta half moons are perfect for any recipe that calls for ravioli or tortellini.
  • Pierogie Mac and Cheese
Mac and cheese is different and delicious when made with potato stuffed pierogies. Yum.
  • Pesto Meatballs with Spaghetti
Any frozen vegetable combo is great in this easy recipe. I'm always on the lookout for new combinations.
  • Crockpot Barley Garlic Chicken Stew
Frozen chicken and frozen corn make this rich slow cooker stew so simple. It's for garlic lovers!
