Freeze Ahead Pie Recipes

  • Strawberry Lemon Mousse Tartlets
These beautiful and delicious little pies start with a purchased graham cracker crust. You make a simple lemon filling and layer it with some fruit sorbet. They're very refreshing and so easy!
  • Coffee Almond Tart
This basic recipe for an ice cream pie can be varied in endless ways. Use Rocky Road ice cream with chopped chocolate and marshmallow creme, or make the crust with vanilla wafers, use strawberry ice cream, and strawberry topping.
  • Ice Cream Tartlets
Well, of course ice cream pies are the perfect freeze-ahead dessert!
  • Lemonade Pie
Just three ingredients make a fabulous lemon pie. Drizzle some melted chocolate over the pie just before you serve it for a decadent touch.
  • Apple Peach Pie
This fabulous recipe freezes very well unbaked. Wrap it, label it, and store it in the freezer up to 3 months. To bake, unwrap the frozen pie and place it on a cookie sheet. Bake in preheated 400 degrees F oven for 15 minutes, then lower the temperature to 350 degrees F and bake for 70-80 minutes until the filling bubbles in the center and the pie crust is golden brown. If the pie gets too brown, simply place a layer of foil over it and continue baking.
  • Frozen Pumpkin Pie
This is a spectacular pie, with a spicy pumpkin pie filling folded together with butter pecan ice cream and whipped topping. Let it stand on the counter for 20-30 minutes before serving so it's easier to cut.
  • French Apple Pie
Freeze this pie unbaked for best results. Wrap it well in freezer wrap, then label and freeze. To thaw and bake, place frozen pie on a cookie sheet. Cover loosely with foil and bake in preheated 350 degree oven for 40 minutes. Then remove the foil and bake 35-40 minutes longer until the pie crust and topping are golden and the apples are tender. Let cool and serve.
  • Black and White Brownie Pie
A brownie in a pie crust! Cool this pie completely after baking, wrap it well in freezer wrap, label, and freeze up to 3 months. To thaw and serve, let the pie sit on the kitchen counter for 2-3 hours until thawed. Drizzle with melted white chocolate before serving.
  • Chocolate Lemon Ice Cream Pie
This beautiful five ingredient pie is something special. Inspiration came from one of Sees' candies; a lemon and chocolate confection my nephew Michael and I just love.
  • Chocolate Peanut Butter Pie
Vanilla ice cream and peanut butter are blended together to make peanut butter ice cream! I love the combination of flavors and textures in this easy pie. As always, let it stand at room temperature for about half an hour before slicing and serving.
  • Chocolate Chip Cookie Pie
This delicious pie is like a chocolate chip cookie in a pie crust. To freeze, let the pie cool completely, then wrap well, label, and freeze. Thaw pie in refrigerator overnight.
  • White Chocolate Cream Pie
This super easy pie is wonderful served frozen. Refrigerate the pie until firm, then wrap, label, and freeze. Let it stand at room temperature for a few minutes before slicing and serving.
