This super easy one dish skillet meal is vegetarian!
Prep Time: 10 minutes
Cook Time: 20 minutes
Ingredients:
- 10 oz. can vegetable broth
- 1/2 cup water
- 6 oz. pkg. black beans with fusilli pasta mix
- 1/2 cup sun dried tomatoes (not in oil), cut into thin strips
- 2 green onions, chopped
- 1/2 cup feta cheese, crumbled
Preparation:
In heavy saucepan, bring chicken broth and water to boil over high heat. Stir in mix package (large pouch and packet). Return to a boil. Reduce heat to low, cover and simmer for 10 minutes.
Add sun-dried tomatoes and simmer 5 minutes more, stirring occasionally. Add green onions and cheese and serve immediately. Serves 4
