Blueberry Pancakes

Try pancakes for dinner. They are very easy and you can enjoy a leisurely meal with your family.

Prep Time: 20 minutes

Cook Time: 5 minutes

Ingredients:

  • 1-1/4 cups flour
  • 2 Tbsp. sugar
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1 egg
  • 1-1/4 cups buttermilk
  • 1/2 tsp. baking soda
  • 2 Tbsp. melted butter
  • 1 cup blueberries, not thawed if frozen

Preparation:

Mix flour, sugar, baking powder and salt. In medium bowl, beat egg and stir in buttermilk and baking soda. With egg beater, beat in flour mixture just until smooth. Stir in the melted butter and blueberries with a large spoon. Pour batter by 1/4 cup measure onto a hot, lightly buttered griddle. When top begins to bubble and edges look cooked, turn and cook on the other side.
