Ingredients:
- 4 6-inch flour tortillas
- 1/4 cup oil
- 16 oz. pkg. frozen chicken flavored soy nuggets (or real chicken nuggets if you must!)
- 16 oz. can vegetarian refried beans
- 1 cup torn lettuce
- 1 cup chunky salsa
- 2 tomatoes, seeded and chopped
- 1 avocado, peeled and chopped
- 1 Tbsp. lemon juice
- 2 cups shredded Cojack cheese
- 1/2 cup sour cream, if desired
Preparation:
Heat oil in heavy skillet over medium-high heat until a drop of water sizzles and pops. Fry flour tortillas, one at a time, about one minute on each side until crisp. Drain on paper towels.
Assemble tostadas as desired, first spreading with refried beans, then layering on nuggets, lettuce, salsa, tomatoes, avocado, and cheese. Serves 4
