Spicy Chili over Polenta

This simple recipe can be made ahead and frozen, then served on a cold winter day.

Prep Time: 25 minutes

Cook Time: 20 minutes

Ingredients:

  • 1 Tbsp. olive oil
  • 1 onion, chopped
  • 1/2 jalapeno chili, seeded and minced
  • 15 oz. can spicy chili beans, undrained
  • 1 tomato, chopped
  • 1 pkg. refrigerated polenta, cut into rounds

Preparation:

In large saucepan, heat oil over medium heat. Add onion and jalapno and cook until tender, about 4 minutes, stirring frequently. Add beans and cook until heated. Stir in tomato and remove from heat.

Slice polenta into rounds and heat according to package directions. Serve chili over polenta.

Freeze chili in small portions. To serve, heat in microwave and serve over polenta as directed above. Serves 4
