Crockpot Barley Casserole
This delicious and healthy Crockpot Barley Casserole recipe can be served as a vegetarian main dish or a side dish.

Prep Time: 15 minutes

Cook Time: 6 hours

Total Time: 6 hours, 15 minutes

Yield: 4 servings


  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup uncooked pearl barley
  • 1/2 cup plain or seasoned tomato juice
  • 1/2 teaspoon dried thyme leaves
  • 1/2 teaspoon dried oregano leaves
  • 1/4 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 red bell pepper, chopped
  • 1 cup chopped mushrooms
  • 2-1/2 cups vegetable broth
  • 1/3 cup toasted pine nuts


In small microwave-safe dish combine olive oil with onion and garlic. Microwave on high for 2 minutes until union is tender. Then combine all ingredients except pine nuts in a 3 quart slow cooker (do NOT use a larger crockpot). Cover and cook on low for 6-8 hours until barley and vegetables are tender. Sprinkle with nuts just before serving.

If you have a newer crockpot, check the barley at 4-1/2 hours to see if it's done.

great recipe, Guest Knitchick

This is a great recipe but having 2 teenage boys I have to tweak most recipes to add bulk to them or they continue to eat all night long. So I add lentils in for a little added bulk & then I bake a loaf of homemade bread to serve with it. According to my youngest son who is a very picky eater ""it's like spaghetti with lentils instead of noodles"" lol Also I didn't have any tomato juice so I improvised with a 1/2 can of tomato paste which I added water to. It worked just fine & the guys all loved it.
