Matzoh Brei

Matzo Brei is kind of like a cross between french toast and scrambled eggs. The pieces will break apart as you stir them; that's desirable, so you have some crisp pieces and others that are soft.

Prep Time: 15 minutes

Cook Time: 15 minutes

Ingredients:

  • 8 matzohs
  • 3 cups boiling water
  • 4 eggs, beaten
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 3-5 Tbsp. margarine or butter

Preparation:

Break the matzohs into 2" squares. Place in a large saucepan. Bring the water to a boil and pour over the matzohs. Drain immediately using a colander. Do not stir the matzos in the water or let them stand. This step is just to moisten them so they will absorb the egg. Return to the saucepan.

Add beaten eggs, salt and pepper. Toss gently with a fork until matzoh pieces are coated with egg and seasonings. Try not to break up the matzohs very much.

Heat the margarine or butter until hot and bubbling in a heavy 10" skillet. Add the matzoh mixture and fry over medium heat. When the bottom starts to brown, turn with a spatula. Keep turning and cooking until light golden brown, about 10 minutes. 4-6 servings
