Meatless Loaf

This recipe tastes just like a real meatloaf. You could add some crushed red pepper flakes if you like your food spicy.

Prep Time: 20 minutes

Cook Time: 60 minutes

Ingredients:

  • 3 eggs, beaten
  • 1 Tbsp. dried parsley flakes
  • 1 tsp. dried Italian seasoning
  • 1/2 cup dry bread crumbs
  • 1/4 tsp. pepper
  • 2 tsp. vegetable oil
  • 1-1/2 cups diced onions
  • 3 garlic cloves, minced
  • 12 oz. roll frozen vegetarian ground beef substitute, thawed
  • 1/2 cup ketchup
  • 1 Tbsp. mustard

Preparation:

Preheat oven to 350 degrees F. In large mixing bowl, combine eggs, parsley, Italian seasoning, bread crumbs and pepper and mix well. Set aside. Spray 9x5" loaf pan with nonstick cooking spray and set aside.

In medium saucepan, sauté onions and garlic in vegetable oil. Add to egg mixture along with thawed beef substitute. Combine ketchup and mustard in small bowl; add 2 Tbsp. of this mixture to onion mixture. Stir thoroughly and press into prepared loaf pan.

Bake at 350 degrees F for 50-60 minutes. Spread remaining ketchup mixture over loaf during last 15 minutes of baking time to glaze. Let stand 10 minutes before slicing. 6-8 servings
