Mild Cheese Fondue

This fondue is a nice change from the classic swiss or gruyere cheese recipe.

Prep Time: 15 minutes

Cook Time: 10 minutes

Ingredients:

  • 1/4 cup butter
  • 3 Tbsp. flour
  • 1/2 cup chicken broth or vegetable broth
  • 1 cup heavy cream
  • 1-1/2 cups shredded Swiss cheese
  • 1-1/2 cups shredded Havarti cheese
  • 1 cup shredded Colby cheese
  • 1 Tbsp. lemon juice

Preparation:

In large saucepan over medium heat, melt butter. Add flour; cook and stir until bubbly, about 2-3 minutes. Stir in chicken broth and cream and cook over medium heat until thickened. Add cheeses, about 1 cup at a time, stirring constantly until melted and blended. Cook for a few minutes until slightly thickened. You may need to add more cheeses to reach the desired consistency. Stir in lemon juice until smooth. Pour into heated fondue pot set over a candle or sterno. Serve with breadsticks and fresh vegetables for dipping.
