Meatless Meatballs and Fettuccine

I love the flavor combination in this super easy recipe. You can use frozen fully cooked meatballs if you are a meat eater. If not, use this Meatless Balls recipe.

Prep Time: 15 minutes

Cook Time: 15 minutes

Ingredients:

  • 1 recipe Meatless Balls
  • 12 oz. pkg. refrigerated fettuccine pasta
  • 16 oz. pkg. frozen bell pepper and onion stir fry
  • 1 Tbsp. olive oil
  • 10 oz. pkg. refrigerated pesto
  • 1 cup half and half
  • 1/2 cup grated Parmesan cheese

Preparation:

Bake meatballs as directed in recipe or on package and set aside. Cook fettuccine as directed on package. Drain, rinse with water, and set aside.

Meanwhile, in large skillet cook bell pepper and onion stir fry as directed on package. When tender and hot, stir in meatballs, cooked fettuccine, pesto, and half and half. Cook over medium heat for a few minutes, stirring constantly, until mixture is hot. Sprinkle with Parmesan cheese and serve. Serves 4 to 6
