This wonderful vegetarian entree recipe can be made in just a few minutes with these excellent convenience products.

Cook Time: 10 minutes
Ingredients:
- 16 ounce roll refrigerated polenta
- 3 tablespoons butter
- 1 (15 ounce) can black beans, rinsed and drained
- 1 cup chunky salsa
- 1 green bell pepper, chopped
- 2 tablespoons chopped fresh cilantro or parsley
- 1/2 cup shredded Pepper Jack cheese
- 1/4 cup grated Parmesan cheese
Preparation:
Cut polenta into 1/2" slices. In medium bowl, combine black beans, salsa, green pepper, cilantro, and cheeses and mix gently. Set aside.In heavy nonstick skillet, melt butter over medium heat. Add polenta rounds; cook, turning once, until golden brown and crisp. As polenta cooks, remove to paper towels to drain.
Place two polenta rounds on each plate and top with black bean mixture. Serves 6
