- 10-oz. pkg. Mediterranean-style salad greens
- 1 yellow summer squash, peeled, seeded, and chopped
- 1/3 cup French or Russian salad dressing
- 1/2 cup feta or firm goat cheese, crumbled
- 10 taco shells
Preparation:
In large bowl combine all ingredients except taco shells and toss to combine. You could add more ingredients like chopped bell peppers, mushrooms, or minced jalapeno peppers. Fill shells with this mixture and serve immediately. 5 servings
