This meatless entree Passover recipe is kind of like the reverse of matzoh brei - eggs with slightly crunchy matzoh pieces.
Prep Time: 15 minutes
Cook Time: 10 minutes
Ingredients:
- 8 eggs, beaten
- 1/4 cup water
- 1 matzoh square, broken into 1" pieces
- salt and pepper to taste
- 3 Tbsp. margarine
Preparation:
In large bowl, combine the eggs, water, matzoh pieces, salt and pepper and stir well. Heat the margarine in a heavy skillet. When hot and bubbly, add the eggs and cook as for scrambled eggs - just set but still creamy is best.
Serves 4
