Scrambled Eggs with Matzohs

This meatless entree Passover recipe is kind of like the reverse of matzoh brei - eggs with slightly crunchy matzoh pieces.

Prep Time: 15 minutes

Cook Time: 10 minutes

Ingredients:

  • 8 eggs, beaten
  • 1 matzoh square, broken into 1" pieces
  • salt and pepper to taste
  • 5 Tbsp. butter

Preparation:

In large bowl, combine the eggs, matzoh pieces, salt and pepper and stir well. Heat the butter in a heavy skillet. When hot and bubbly, add the eggs and cook as for scrambled eggs - just set but still creamy is best. Serves 4
