Ingredients:
- 3 slices bacon
- 1 onion, chopped
- 2 (15 oz.) cans spicy chili beans, undrained
- 1-1/2 cups ground beef substitute crumbles
- 8 oz. pkg. corn bread mix
- 1/4 tsp. crushed red pepper flakes
- 1/2 cup shredded CoJack cheese
- 1/2 cup grated Parmesan cheese
Preparation:
Preheat oven to 400 degrees F. Spray 2 quart glass baking dish with nonstick cooking spray.In large skillet, cook bacon until crisp; drain, crumble, and set aside. Pour out fat from pan; do not wipe out. Add onion; cook and stir until tender. Then add beans and crumbles. Heat until bubbly, about 4-5 minutes. Spoon hot mixture into prepared baking dish.
In medium bowl, prepare corn bread mix as directed on package, adding crumbled bacon, red pepper flakes, green onions, and CoJack cheese. Mix just until blended, then drop by spoonfuls over bean mixture. Sprinkle with Parmesan cheese.
Bake at 400 degrees F for 25-30 minutes until corn bread is deep golden brown and bean mixture is bubbly. 4-6 servings
