Ingredients:
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 (15 oz.) cans spicy chili beans, undrained
- 1 cup chili sauce
- 2 cups ground beef substitute crumbles
- 8.5 oz. pkg. corn bread mix
- 1/4 tsp. crushed red pepper flakes
- 1/3 cup chopped green onion
- 1 cup shredded CoJack cheese
- 1/2 cup grated Parmesan cheese
Preparation:
In large skillet, cook onion and garlic in oil until tender, about 8-9 minutes. Then add beans, chili sauce, and crumbles. Heat until bubbly, about 4-5 minutes. Spoon hot mixture into prepared baking dish.
In medium bowl, prepare corn bread mix as directed on package, adding red pepper flakes, green onions, and CoJack cheese. Mix just until blended, then drop by spoonfuls over bean mixture. Sprinkle with Parmesan cheese.
Bake at 400 degrees F for 25-30 minutes until corn bread is deep golden brown and bean mixture is bubbly.
Note: Regarding the review about lard in corn muffin mix: some mixes do contain lard and some do not. For instance, Betty Crocker's Cornbread and Muffin Mix does not have lard. You must always read the ingredient label whenever you buy a processed product if you are trying to avoid certain ingredients.
