Spicy Cornbread Bake

This delicious, hearty recipe is so good your family will never know it's vegetarian! You can always substitute cooked crumbled ground beef for the substitute if you'd like.

Prep Time: 15 minutes

Cook Time: 30 minutes

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 (15 oz.) cans spicy chili beans, undrained
  • 1 cup chili sauce
  • 2 cups ground beef substitute crumbles
  • 8 oz. pkg. corn bread mix
  • 1/4 tsp. crushed red pepper flakes
  • 1/3 cup chopped green onion
  • 1 cup shredded CoJack cheese
  • 1/2 cup grated Parmesan cheese

Preparation:

Preheat oven to 400 degrees F. Spray 2 quart glass baking dish with nonstick cooking spray.

In large skillet, cook onion and garlic in oil until tender, about 8-9 minutes. Then add beans, chili sauce, and crumbles. Heat until bubbly, about 4-5 minutes. Spoon hot mixture into prepared baking dish.

In medium bowl, prepare corn bread mix as directed on package, adding red pepper flakes, green onions, and CoJack cheese. Mix just until blended, then drop by spoonfuls over bean mixture. Sprinkle with Parmesan cheese.

Bake at 400 degrees F for 25-30 minutes until corn bread is deep golden brown and bean mixture is bubbly. 4-6 servings
