Use Meatless Meatballs in this easy recipe.

Ingredients:
- 1 recipe Meatless Meatballs, baked
- 1 onion, chopped
- 2 Tbsp. olive oil
- 2/3 cup long grain rice
- 4 cups water
- 2 Tbsp. sugar
- 1/3 cup apple cider vinegar
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 6 oz. can pineapple juice
- 2 Tbsp. cornstarch
- 1/4 cup low sodium soy sauce
Preparation:
In large pot, saute onion in olive oil. Add rice and stir to coat. Add water and bring to a boil. Reduce heat, cover, and simmer until rice is tender, 13-14 minutes. Stir in sugar, vinegar, peppers, pineapple juice, and baked 'meatballs'.
Bring to a boil. Reduce heat, cover and simmmer for 5 minutes until peppers are crisp-tender. In small bowl, combine cornstarch and soy sauce, mix well. Stir into soup and cook over medium heat until soup boils and thickens. 6 servings
