Vegetarian Chili Tostadas

Vegetarian Chili Tostadas are a wonderful recipe for a family eating in shifts. Just prepare the toppings and refrigerate them, then as your family comes home they can assemble and eat their tostadas using Crockpot Vegetarian Chili.

Prep Time: 30 minutes

Cook Time: 8 hours, 10 minutes

Ingredients:

  • Crockpot Vegetarian Chili
  • 6-8 Baked Tostada Shells
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 cups grape tomatoes, quartered
  • 1 cup sliced ripe olives
  • 1/2 cup chopped green onion
  • 2 cups shredded Colby cheese
  • 1-2 cups shredded lettuce
  • 1 cup sour cream

Preparation:

Prepare Crockpot Vegetarian Chili. Prepare Baked Tostada Shells and store at room temperature. Prepare all other ingredients and cover and refrigerate.

When the chili is done (this chili can cook up to 10-12 hours and still be good) let your family assemble their tostadas using the shells and all the toppings. Serves 6-8
