'Beety' Taco Skillet

This delicious one dish meal tastes just like a taco. You could serve it with some tortilla chips (try different flavored ones) and a simple green salad. Substitute Homemade Taco Seasoning for the purchased kind if you like.

Prep Time: 25 minutes

Cook Time: 15 minutes

Ingredients:

  • 1 Tbsp. olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups frozen ground beef substitute crumbles
  • 1-1/2 cups water
  • 1 envelope taco seasoning mix or 2 Tbsp. homemade mix
  • 1 cup chunky salsa
  • 1 cup frozen corn
  • 1-1/2 cups uncooked instant rice
  • 1-1/2 cups shredded taco cheese
  • 1 tomato chopped
  • 1/2 cup sour cream
  • 1 avocado, peeled and diced

Preparation:

In 10" skillet, heat olive oil and add onion and garlic. Cook and stir until onion is tender. Add ground beef substitute and cook 2-3 minutes longer. Stir in water, taco seasoning mix, salsa, and corn. Heat to boiling, stirring frequently. Then stir in rice. Boil 1 minute, then remove from heat, cover, and let stand for 8 minutes. Fluff mixture with a fork, then sprinkle with cheese. Cover again and let stand for 2 minutes until cheese melts. Sprinkle tomato and avocado over skillet mixture. Top individual servings with sour cream. Serves 5
