Veggie Burrito

Make sure you sample the deli vegetable side dish recipe before you purchase it for this burrito - so you know you like the seasonings! I use a broccoli and red pepper combination in this easy recipe.

Prep Time: 10 minutes

Cook Time: 12 minutes

Ingredients:

  • 1 lb. deli vegetable side dish
  • 15 oz. can spicy chili beans, undrained
  • 1/2 tsp. chili powder
  • 8 (8") flour tortillas
  • 1-1/2 cups shredded Pepper Jack cheese

Preparation:

In a large skillet, combine vegetables, beans and chili powder. Bring to a boil. Reduce heat and simmer for 6-8 minutes until vegetables are tender, stirring occasionally. Spoon 1/2 cup vegetable mixture down the center of each tortilla. Top each with about 3 Tbsp. cheese and roll up. If desired, serve with salsa, sour cream, shredded lettuce and chopped tomatoes. Serves 8
