Who doesn't love chicken? It's delicious, inexpensive, and easy to prepare. For Mother's Day, make my foolproof Parmesan Chicken. Everybody (except Mom, of course) can pitch in and help. Let the little ones mix the bread crumbs with the other ingredients. Older children can coat the chicken, and Dad should put it in and take it out of the oven.

A simple salad and some classic potatoes round out the menu. Since this is a more casual meal, use the everyday dishes, but make sure there's a bouquet of flowers or pile of presents at Mom's place. Have a wonderful dinner!
