Applesauce Muffins are a delicious choice for breakfast or brunch. These quick and easy muffins reheat beautifully in the microwave (about 10 seconds on high per muffin) for a warm breakfast. Sanding sugar is a coarse sugar you can find in baking supply stores. You can vary this recipe by adding dried cranberries, currants, or cherries to the batter.

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Yield: 12 muffins

Ingredients:

  • 1/4 cup butter, softened
  • 1/4 cup vegetable oil
  • 3/4 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup applesauce
  • 1-1/4 cups all purpose flour
  • 3/4 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cardamom
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon salt
  • Sanding or coarse sugar

Preparation:

Preheat oven to 350 degrees F. Line 12 muffin tins with paper liners and set aside.

In large bowl, combine butter, oil, brown sugar, and granulated sugar; mix well until fluffy. Beat in eggs and vanilla until smooth Stir in applesauce.

Add flour, whole wheat flour, baking soda, cinnamon, cardamom, nutmeg, and salt and stir just until combined.

Fill muffin cups 3/4 full with batter. Sprinkle each muffin generously with sanding sugar. Bake for 18-23 minutes or until tops spring back when muffins are lightly touched with your finger. Cool in tins 4 minutes, then remove to wire racks to cool completely.

Scrumptious muffins, Guest Amy

This muffin recipe is very easy and delicious. I couldn't find sanding sugar, so I just sprinkled some brown sugar on top. What a hit! The kids love this for breakfast before school.
