Ingredients:
- 1/4 cup butter, softened
- 1/4 cup vegetable oil
- 3/4 cup packed brown sugar
- 1/4 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 cup applesauce
- 1-1/4 cups all purpose flour
- 3/4 cup whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon cardamom
- 1/4 teaspoon nutmeg
- 1/8 teaspoon salt
- Sanding or coarse sugar
Preparation:
In large bowl, combine butter, oil, brown sugar, and granulated sugar; mix well until fluffy. Beat in eggs and vanilla until smooth Stir in applesauce.
Add flour, whole wheat flour, baking soda, cinnamon, cardamom, nutmeg, and salt and stir just until combined.
Fill muffin cups 3/4 full with batter. Sprinkle each muffin generously with sanding sugar. Bake for 18-23 minutes or until tops spring back when muffins are lightly touched with your finger. Cool in tins 4 minutes, then remove to wire racks to cool completely.
