Apple Raisin Muffins

Apple Raisin Muffins are quick and easy; start with applesauce and raisins, and end up with delicious little muffins.

Prep Time: 20 minutes

Cook Time: 20 minutes

Ingredients:

  • 1-3/4 cups flour
  • 1 cup brown sugar
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1/4 tsp. salt
  • 1 cup applesauce
  • 1 egg
  • 1/3 cup vegetable oil
  • 1 cup raisins
  • 3/4 cup granola
  • 1/2 cup chopped pecans

Preparation:

Preheat oven to 375 degrees F. Line 12 muffin cups with paper liners and set aside.

In large bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt and mix well. In medium bowl, combine applesauce, egg, and oil. Add to dry ingredients and stir until combined. Add raisins, granola, and nuts. Fill muffin cups 3/4 full of batter and bake for 20-25 minutes or until muffins are golden brown and firm. Remove to wire racks to cool. Serve warm. Makes 12 muffins
