Banana Nut Muffins

Yum - muffins made with bananas and nuts, topped with a simple drizzle of frosting.

Prep Time: 25 minutes

Cook Time: 20 minutes

Ingredients:

  • 3 bananas, peeled and mashed
  • 1/2 cup vegetable oil
  • 2 eggs
  • 2 cups flour
  • 1-1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup sugar
  • 1 cup chopped pecans
  • 2 Tbsp. orange juice
  • 1 cup powdered sugar

Preparation:

Preheat oven to 375 degrees F. Line 12 muffin cups with paper liners; set aside.

In large bowl, combine bananas, vegetable oil, and eggs and beat well. In a sifter or large sieve, combine flour, baking powder, baking soda, salt, and sugar. Sift directly into banana mixture. Stir mixture well until combined. Add nuts and fold in. Fill muffin cups 2/3 full. Bake for 18-23 minutes or until muffins are golden brown and firm. Remove to wire rack to cool.

While muffins are still warm, in small bowl combine orange juice and powdered sugar and mix well. Drizzle over warm muffins and serve. Makes 12 muffins
