Yum - these fabulous muffins are made with bananas and nuts, topped with a simple drizzle of orange frosting.

Prep Time: 25 minutes

Cook Time: 20 minutes

Total Time: 45 minutes

Yield: Makes 12 muffins


  • 3 bananas, peeled and mashed
  • 1/2 cup vegetable oil
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 2 cups flour
  • 1-1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup chopped pecans
  • 2 Tbsp. orange juice
  • 1 cup powdered sugar


Preheat oven to 375 degrees F. Line 12 muffin cups with paper liners; set aside.

In large bowl, combine bananas, vegetable oil, sugar, brown sugar, and eggs and beat well. In a sifter or large sieve, combine flour, baking powder, baking soda, salt, and sugar. Sift directly into banana mixture. Stir mixture well until combined. Add 3/4 of the nuts and fold in. Fill muffin cups 2/3 full and top with remaining chopped nuts. Bake for 18-23 minutes or until muffins are golden brown and firm. Remove to wire rack to cool.

If desired, make frosting. While muffins are still warm, in small bowl combine orange juice and powdered sugar and mix well. Drizzle over warm muffins and serve.
