BisQwick Muffins

BisQwick Muffins are so simple and can be flavored any way you'd like. Press a bit of jam or jelly into the batter, sprinkle them with nuts or a streusel topping, or fold in some chopped dried fruit just before baking.

Prep Time: 10 minutes

Cook Time: 14 minutes

Ingredients:

  • 3 cups Homemade Bis-Qwick-As-A-Wink Baking Mix
  • 2 tablespoons brown sugar
  • 1/2 cup water
  • 1/2 cup milk
  • 1 egg
  • 1 teaspoon vanilla

Preparation:

Preheat oven to 425 degrees. Blend wet ingredients in one bowl and dry ingredients in another. Stir wet ingredients into dry just to moisten.

Spoon batter into greased or paper-lined muffin cups and bake about 12-15 minutes or until light golden brown. Add spices like 1/2 tsp. cinnamon, or 1/4 tsp. nutmeg or 1/4 tsp. allspice, if desired. You can blend 1/2 cup oatmeal, 1/4 cup flour, 3 tablespoons brown sugar and add 3 tablespoons melted butter to make a streusel and sprinkle on top. Or add spices and press about 1 teaspoon apricot jam into batter before baking. Makes 12 muffins.
