If you feel like serving something special for brunch, or if you have some unexpected guests, whip up this last minute brunch menu in a flash. The foods are just a little bit special, but not difficult to make. And they're all easy for even beginning cooks.

The secret to brunch is to make recipes that are hearty enough so they substitute for lunch, but light enough so they're fun and easy to eat for your first meal of the day. Put out big pitchers of orange juice and milk, and brew coffee for those who like it. Some champagne is certainly in order too! Set a beautiful table, light some candles, and sit down to a wonderful meal with family and friends.

  • Melon and Avocado Cocktail
