Bourbon Balls

This is a variation on the classic Southern recipe. You can substitute apple juice for the bourbon if you're serving these for children. Or use rum instead of the bourbon. Be sure to use good quality liqueur, since the taste is essential and prominent in these cookies.

Prep Time: 15 minutes

Cook Time: 2 minutes

Total Time: 17 minutes

Yield: 24 cookies

  • 1/2 cup milk chocolate chips
  • 2 cups vanilla wafer crumbs
  • 1-1/2 cups powdered sugar
  • 1 cup finely chopped cashews
  • 1/4 cup cocoa
  • 1/3 cup bourbon OR apple juice
  • 1/4 cup light corn syrup
  • More powdered sugar

Melt the chocolate chips in small microwave-safe bowl by microwaving on 50% power for 2 minutes. Remove and stir until melted.

In large bowl, combine wafer crumbs, powdered sugar, cashews, and cocoa. Add the melted chocolate, bourbon, and light corn syrup and mix until well blended. The dough should be firm.

Cover and refrigerate dough for 2-3 hours. Shape into small balls and roll in powdered sugar to coat. Store in air tight container at room temperature for 4-6 days before serving so the flavors mellow.
