Skinny Mint Cookies

Skinny Mint Cookies are super easy to make and taste like the Girl Scout's treat, but they're bigger! The chocolate wafer cookies I use are Nabisco's Famous Chocolate Wafers. Those are the cookies used for Old Fashioned Chocolate Dessert too. For the picture, I found these fabulous mint flavored plain chocolate cookies called Anna's Chocolate Mint Thins. They're spectacular with this treatment.

Prep Time: 15 minutes

Cook Time: 3 minutes

Total Time: 18 minutes

Yield: 30-36 cookies


  • 2 cups semisweet chocolate chips
  • 2 cups milk chocolate chips
  • 20 unwrapped Andes candies (chocolate mints)
  • 1/8 teaspoon peppermint extract
  • 1 (9-ounce) package plain chocolate wafer cookies


In medium microwave-safe bowl, combine semisweet chocolate chips and milk chocolate chips. Microwave on high power for 1 minute; remove and stir. Return to microwave and cook on 50% power for 1 minute longer; remove and stir. Continue microwaving at 50% power and stirring until chips are melted and mixture is smooth.

Remove from microwave and stir in the chocolate mint candies until smooth. Add peppermint extract and stir until combined.

Dip the cookies, one at a time, into the chocolate mixture. Gently shake off excess chocolate and place on waxed paper to cool and set. Store in cool place.

Oven broken and needed a no bake recipe, Member neworleanshomecookin

For a holiday cookie swap for my kids, I needed a no bake cookie recipe. This one is delish! The grocery store did not have the Nabisco Chocolate wafers so I used Nilla Wafers and they worked well! Thanks, we'll make this again soon, especially appropriate for the holidays in my opinion...
