Frosted Graham Cracker Sandwiches

These simple sandwiches, made of graham crackers sandwiched with buttercream frosting, were a staple when I was growing up. They're so easy to make and the perfect treat when you don't want to bake and there's nothing sweet in the house. They can be made with vanilla frosting or peanut butter frosting. You'll love these super easy Graham Cracker Sandwiches!

Prep Time: 20 minutes

Total Time: 20 minutes

Yield: 8-10 servings

Ingredients:

  • 1/2 cup butter, softened
  • 4 cups powdered sugar
  • 3-4 tablespoons light cream
  • 1 teaspoon vanilla
  • pinch salt
  • 1/2 cup peanut butter, if desired
  • graham crackers

Preparation:

In medium bowl, beat butter with 1 cup powdered sugar until light and fluffy. Gradually add remaining powdered sugar alternately with the cream until frosting is fluffy and desired consistency. Beat in the vanilla and salt.

If you're using peanut butter, add it now. Or divide the frosting in half and make half peanut butter and half vanilla.

At any rate, now spread a generous portion of the frosting on one graham cracker, top with another, and squeeze gently. Eat immediately, or cover and let stand a few hours. The graham crackers will get softer as they absorb moisture from the frosting. I personally love that, but if you don't, eat them immediately!

My kids love to make this super easy recipe. We vary it all kinds of ways by using different graham crackers and adding some jam to the crackers before spreading the frosting. We love it!!
