Sweet and Salty Nut Bars

Sweet and Salty Nut Bars are delicious and fun to make. They taste just like the salted nut bar candy, but better! If you can't find peanut butter sandwich cookies, use golden sandwich cookies, reduce butter to 1/3 cup, and add 3 tablespoons peanut butter to the crust.

Prep Time: 25 minutes

Cook Time: 20 minutes

Total Time: 45 minutes

Yield: 36 bars

  • 1 pound package peanut butter sandwich cookies, broken
  • 1/2 cup butter
  • 2 (7-ounce) jars marshmallow creme
  • 5 cups powdered sugar
  • 1-1/2 cups light corn syrup
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1-1/2 cups peanut butter
  • 3 cups crisp rice flake cereal (Special K)
  • 2 cups salted peanuts
  • 1/4 teaspoon salt

Preheat oven to 350 degrees F. Process cookies until crumbly. Melt butter, add to crumbs; process until mixed. Press into 9” x 13” pan. Bake for 8-9 minutes until set. Cool completely.

In large bowl, combine marshmallow creme and powdered sugar; mix well, starting with a spoon and ending with your hands. Press this mixture on top of the crust.

Then, in a large microwave-safe bowl, combine corn syrup, brown sugar, and granulated sugar; mix well. Microwave on high power for 2 minutes; remove and stir. Rinse spoon with hot water.

Return mixture to microwave; microwave for 2 minutes longer. Remove from microwave and stir in peanut butter until smooth.

Stir cereal and peanuts into peanut butter mixture and drop by spoonfuls over the marshmallow creme mixture. Using the back of a buttered spoon, spread gently to cover. Sprinkle evenly and lightly with salt. Let stand until cool; cut into bars.
