I don't think there's an easier way to make dinner when you come home from work or school. Just plop the meats and vegetables, along with some seasonings and maybe a sauce, into a roasting pan, put it in the oven, and in about an hour you'll have a complete dinner ready for four to six people.
Invest in a good roasting pan. My favorite is heavy duty stainless steel pans without a nonstick coating. Nonstick coatings aren't the best choice when you're cooking with high heat. These pans cost more, but they are durable, clean easily, and will last you a lifetime.
Once you get the hang of roasting your dinner, you can vary these recipes any way you'd like. Remember that the more quickly roasted meats, like fish and chicken breasts, should be paired with delicate vegetables like mushrooms, bell peppers, and yellow squash; while roasts, chops, and whole birds can be roasted along with potatoes, carrots, and other root vegetables.
Also, take advantage of the many 'value added' ingredients in the meat aisle and the produce section of your supermarket. You can find sliced mushrooms and carrots, preseasoned chicken breasts and pork chops, refrigerated sliced potatoes, and prepared garlic and onions.
So pull out your roasting pan and make it easy on yourself: make dinner in your oven this week. Enjoy.
