My husband adores this recipe; he asks for it almost every week! It's a very simple recipe that has a complex flavor because of the curry powder and chutney. Try it!
Prep Time: 25 minutes
Ingredients:
- 1 (12 ounce) package uncooked orzo (rosamarina) pasta
- 1-1/2 cups plain yogurt
- 1/2 cup mayonnaise
- 1 (7 ounce) bottle mango chutney
- 1 Tbsp. curry powder
- 1/2 cup milk
- 2 cups red grapes
- 1 (12 ounce) can chicken, drained
- 2 cups chopped celery hearts
Preparation:
Cook pasta according to package directions. While pasta is cooking, combine yogurt, mayonnaise, chutney, curry powder, and milk in large bowl and mix with wire whisk to blend. Add grapes, chicken, and celery and mix gently. When pasta is cooked al dente, drain and add to salad. Mix gently, then cover and refrigerate for 2-4 hours to blend flavors. Serves 8-10
