This simple main dish chicken salad recipe is very fresh and delicious. I like to use shredded chicken, because it holds onto the vinaigrette and stays moist and tender. Make sure that you use balsamic vinaigrette salad dressing, not plain balsamic vinegar!

Ingredients:
- 3/4 cup balsamic vinaigrette salad dressing
- 2 tablespoons honey mustard
- 2 cups cooked shredded or chopped chicken
- 1/2 lb. green beans, trimmed, cut into 2" pieces
- 9 oz. pkg. refrigerated cheese tortellini
- 1/2 cup minced red onion
- 2 cups grape tomatoes
- 1 cup Havarti cheese cubes
- 1/2 cup chopped fresh basil leaves
Preparation:
Combine salad dressing with mustard in large bowl; add chicken, mix to coat and set aside. Meanwhile, bring water to a boil in a heavy stockpot. Add beans and cook for 3 minutes. Add tortellini and cook until tender, 3-4 minutes longer. Drain well.
Add to large bowl with remaining ingredients and toss gently to coat. Serve immediately, or cover and chill for a few hours before serving.
