Tortellini Vegetable Salad

If you use cheese filled tortellini in this easy recipe, it becomes vegetarian. Try new and different flavors of tortellini for variety. You can also use frozen tortellini; just follow the package directions to cook.

Prep Time: 15 minutes

Cook Time: 10 minutes

Ingredients:

  • 2 (9-ounce) packages refrigerated or frozen tortellini
  • 2 cups fresh or frozen broccoli florets
  • 1 yellow or red bell pepper, chopped
  • 2 (6-ounce) jars marinated artichoke hearts, undrained
  • 3/4 cup zesty Italian salad dressing

Preparation:

In large pot of boiling water, cook tortellini according to package directions, adding broccoli during the last two minutes of cooking time. Drain thoroughly.

Meanwhile, combine bell pepper, artichoke hearts and liquid and salad dressing. Add drained tortellini and broccoli and stir gently to coat. Cover and chill for 2-3 hours, or serve immediately. 6 servings
