Southwest Mac and Cheese

You could substitute Pepper Jack cheese for the jalapenos and Monterey Jack cheese to save time.

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Yield: Serves 4

Ingredients:

  • 3 cups rotelle or rotini pasta
  • 3 cups water
  • 1 cup evaporated milk
  • 1 red bell pepper, chopped
  • 4 green onions, chopped
  • 1/4 cup sliced black olives
  • 2 Tbsp. canned diced jalapeno peppers, drained
  • 1 cup shredded Monterey Jack cheese

Preparation:

Combine pasta and water in large saucepan and bring to a boil. Cook, stirring occasionally, for 8 to 10 minutes or until pasta is tender and water is almost gone. Add evaporated milk, red bell pepper, green onions, olives and jalapenos; bring to a boil.

Reduce heat to medium. Cook mixture, stirring frequently, until sauce has thickened slightly, about 5-7 minutes. Add cheese and stir until cheese is melted and sauce is thickened.

We are renovating our kitchen and the only cooking implements I have accessible are an electric fry pan and a microwave. I found these skillet meals on about.com after an internet search and they have been a lifesaver. As far as this recipe goes, it was easy and fabulous. I had to make some modifications. I could not find chopped jalapenos in a jar, so I bought a small can of sliced black olives with jalapeno. Next time I will buy a jalapeno and chop it to give the dish a little more kick. Also, I used the whole can of evaporated milk instead of 1 cup. The can holds 1.5 cups, and I don't know what I'd do with the other .5 cup. Finally, I added a pound of smoked sausage in 1-inch chunks. It was wonderful - can't wait to eat the leftovers!
