Ingredients:
- 2 (16-ounce) packages frozen potato pierogies
- 2 cups frozen peas
- 1 (9-ounce) container basil pesto
- 1/2 cup heavy cream
- 1/3 cup shredded Parmesan cheese
Preparation:
Bring 2 cups water to a boil in a large skillet. Add pierogies, cover skillet, and simmer for 5-8 minutes, turning pierogies over twice, until hot. Add peas; cover skillet and cook 2 minutes longer.
Drain water from skillet. Return pierogies and peas in skillet to heat. Add pesto and cream. Cook over medium heat until pesto mixture is hot, stirring occasionally. Sprinkle with cheese, stir gently, and serve immediately.
