Fettuccine with Sausage and Peppers

Fettuccine with Sausage and Peppers

This delicious recipe is rich and full of flavor. Serve it to guests along with Garlic Bread.

Prep Time: 25 minutes

Cook Time: 20 minutes

Ingredients:

  • 1-1/2 lb. sweet Italian sausages
  • 1/4 cup water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 14.5-oz. can diced tomatoes
  • 8-ounce can tomato sauce
  • 6 oz. can tomato paste
  • 1/4 cup water or dry red wine
  • 3 tomatoes, seeded and chopped
  • 1 tsp. dried basil leaves
  • 1/2 tsp. dried thyme leaves
  • 16 oz. fettuccine pasta
  • 1 cup grated Parmesan cheese

Preparation:

In a large skillet, place sausages and water and bring to a boil. Cover and simmer for 5 minutes. Drain sausages and continue cooking over medium heat until sausages begin to brown.

Remove sausages from skillet and slice into 1-1/2" pieces. Return to skillet along with onion, garlic, and peppers. Cook and stir until vegetables are crisp-tender, about 5 minutes. Stir in diced tomatoes, tomato sauce, tomato paste, tomatoes, basil, and thyme. Simmer 15-20 minutes until sausages are thoroughly cooked.

Meanwhile, cook fettuccine according to package directions and drain well. Serve sauce over fettuccine; top with Parmesan cheese. 6 servings
