Linguine with Peppers

If you have fresh peppers on hand, you can simply slice them and use them instead of the frozen variety. Add an onion too.

Prep Time: 10 minutes

Cook Time: 10 minutes

Ingredients:

  • 1 lb. linguine pasta
  • 3 cups frozen peppers and onions for stir-fry
  • 1/4 cup olive oil
  • 1/2 cup grated Parmesan cheese

Preparation:

Bring a large pot of water to a boil. Meanwhile, saute peppers and onions in the olive oil in a large skillet until hot and tender, stirring frequently.

Cook the linguine pasta according to package directions until al dente. Drain and add to peppers in skillet. Toss thoroughly and serve with Parmesan cheese. 4 servings
